What is Coffee Processing? 

Once our coffee beans have been hand-picked with care the magic begins with the processing of the coffee beans. Processing coffee involves removing layers of pulp and other elements that surround the coffee bean. The type of processing chosen to do this has a significant impact on the flavor of the coffee beans!

Types of Coffee processing: 

There are different ways to process coffee, each process give the coffee beans a different flavor! Let’s break them down: 

  1. Washed Processing: In this method, the coffee cherries are pulped, and the beans are placed in tanks with water. The beans are left to process for up to 24 hours, this begins to break down the mucilage. When the coffee is ready, it’s washed with fresh water, stopping the process. This process gives coffee a fruit flavor with a light acidity.

  2. Natural Processing : Somme farmers know it as dry processing, this method involves drying the whole coffee cherries in the sun before removing the dried fruit layers. The mix between the beans and the fruit during drying gives the coffee beans sweetness and fruitiness and full bodied flavor.

  3. Honey Processing: In honey processing, the coffee cherries are pulped, but some or all of the mucilage is left on the beans during drying. Depending on the amount of mucilage left. Honey process has a balanced flavor with both fruity, with natural flavors and caramel hint flavors.
